Smoked Wild Finnish Candy
Thick pieces of salmon, skin on, are dry-brined, rinsed, drained and racked. They are chilled and dried overnight, then smoked and cooked with our unique blend of wood chips. After a rest in the cooler, they are vacuum-packed, labeled and flash-frozen. They are shipped to their final destination frozen, in insulated styro containers.

Ingredients: Wild salmon; certified organic and fair trade cane sugar; direct fair trade, raw cane sugar; hand-harvested, Celtic grey salt; certified organic maple syrup; natural wood smoke.

Cut from wild chum salmon. Other salmon species are made into Finnish Candy, when available. Sold in 200 gram or random-weight packages.

Characteristics: Flaky, full flavoured with a great mouth feel and no lingering aftertaste. Thank the hand-harvested grey salt and organic sugars for that!

Smoked Wild Salmon Nuggets
The same process as Finnish Candy, but the pieces are skinned and cut in two- to three-bite pieces.

Ingredients: Wild salmon; certified organic and fair trade cane sugar; direct fair trade, raw cane sugar; hand-harvested, Celtic grey salt; certified organic maple syrup; natural wood smoke.

From time to time, particularly in time for the Christmas market season, we make Wild Salmon Nuggets with our other sweeteners (honey and apple syrup) and Wild Sea Smokes signature flavours.

Characteristics: Flaky, full flavoured with a great mouth feel and no lingering aftertaste. The flavoured nuggets build in intensity in your mouth and release when done.

Smoked Wild Tuna Nuggets
The same process as Smoked Wild Salmon Nuggets.

Ingredients: Wild albacore tuna; certified organic and fair trade cane sugar; direct fair trade, raw cane sugar; hand-harvested, Celtic grey salt; certified organic maple syrup; natural wood smoke.

Characteristics: Flaky and full flavoured with a great mouth feel and no lingering aftertaste.
